Tomorrow is Cinco de Mayo and I hope everyone gets a chance to enjoy it with great food, friends, and drinks! Here are a few ideas to put together a nice spread for Cinco de Mayo and also a new recipe for roasted corn with cilantro lime butter.
Roasted Corn with Cilantro Lime Butter
- 4 ears of corn
- ½ stick butter softened
- ½ teaspoon lime zest
- 1 tablespoon chopped cilantro
- 1 clove garlic minced
- 2 teaspoons lime juice
- cotija cheese
- ground chipotle pepper or cayenne
Preheat oven to 350 degrees. Place corn directly on oven rack in husks. Cook for 25-30 minutes until corn feels soft when you press on it. While corn is cooking mix together softened butter, lime zest, lime juice, cilantro, and garlic. Set aside. When corn is ready, pull back husks and top with cilantro lime butter, cotija cheese, and sprinkle with ground chipotle or cayenne.
