Grilled Fingerling Potatoes with Roasted Garlic and Herb Mayo

 

 

This is a super easy side dish that will go great with chicken, steak, burgers, you name it. Potatoes are great on their own, but the mayo with roasted garlic and herbs just adds another layer of creamy goodness.

Roasted Garlic and Herb Mayo

  • ½ cup mayo
  • 1 head roasted garlic
  • ½ tsp white wine vinegar
  • ½ tsp salt
  • 1 tbsp chopped fresh herbs
  • 1 head roasted garlic
Preheat oven to 400 degrees. To make roasted garlic, cut the top off of the garlic to expose the individual cloves. Place garlic on a sheet pan or foil and drizzle with a little olive oil and sprinkle with salt and pepper. Cook 35-40 minutes until garlic is soft and brown. Let cool. Place mayo in a small bowl and squeeze in roasted garlic. Stir with a spoon mashing the garlic on the side of the bowl. Add remaining ingredients and stir to combine. You can use any fresh herbs you like. I used what I had which was a combo of chive, thyme, basil, and oregano. Refrigerate until ready to use.
Grilled Fingerling Potatoes
6 Fingerling potatoes halved
1 tbs olive oil
Place potatoes in a pot with water. Boil potatoes for 7-10 minutes until they are somewhat soft, but not fully cooked. Remove from water and place in a bowl. Coat potatoes with olive oil and sprinkle with salt and pepper. Grill Potatoes cut side down for about 2-4 minutes until they get some nice grill marks. Serve with roasted garlic and herb mayo. Enjoy!
