Sorry I haven’t posted in soooo long! My computer was being repaired and took way longer than I expected. It’s back now so I can get back to the regularly scheduled program.
In my previous post about Rome, I pictured a bacon pizza from what has now become one of my favorite restaurants. I tried to re create this pizza to the best of my ability and I think it came out pretty good. Of course nothing like Italy, but still delicious.
Pizza with Pancetta
- Pizza Dough
- 1 cup cherry tomatoes
- 1 clove minced garlic
- 1 tbs olive oil
- Thinly sliced pancetta
- Whole milk mozzarella
- Parmesan
- Pecorino
For the sauce, bring a medium pot of water to a boil and cook tomatoes just until the skins begin to blister. Remove tomatoes and peel skin. Add olive oil, garlic and a pinch of salt. Set aside for pizza. If you like a lot of sauce, make double. The pizza I had in Italy had very little tomato so this sauce should be enough for two nice sized pizzas or one large.
To assemble you pizza, place a little of the tomato sauce then top with mozzarella, parmesan, pecorino, and pancetta slices. Place on preheated pizza stone and bake on your oven’s highest setting until golden and bubbly.
Even if you don’t have pancetta try with bacon or without any meat. This fresh tomato sauce combined with the mozzarella, parmesan, and pecorino has become my favorite. I hope you enjoy it as much as I do. More recipes and videos to come. Also more pics from my vacation. Thanks for reading!
