Ravioli in Truffle Cream Sauce

Yes, it is just as delicious as it looks! I absolutely love ravioli and who doesn’t love truffle? With just a few ingredients you can make a fast delicious dish that you won’t be able to get enough of! One key ingredient is salsa tartufata. It’s a mix of mushroom, truffle, olives, and oil. It is can be tossed just straight out of the jar with pasta, or used as a spread for sandwiches and bruschetta. In this recipe, I made a simple cream sauce for pasta, but it would also be great over chicken. I bought a small jar of salsa tartufata containing summer truffle from Italy, but I have listed a link below for online purchasing if you are not able to find it locally. Ravioli in Truffle Cream Sauce

  • 2 tbs butter
  • ½ cup heavy cream
  • 1 tbs salsa tartufata*
  • 1/4 cup freshly grated parmesan
  • Fresh ravioli about 8oz or half a package
* salsa tartufata can be purchased online at Amazon
Add butter to pan on medium-low heat  and melt. Add heavy cream and then salsa tartufata.  Bring to a boil, then reduce heat and simmer for 5 minutes. Add parmesan and stir. Add cooked ravioli to pan along with a little of the cooking water, about 1-2 tablespoons. Simmer for an additional minute or so. Season with salt and pepper. Serve immediately.
