Summer Tea and Wine Punch

 

It’s hot on the East Coast, I mean really hot! Even in this weather it’s still nice to enjoy a refreshing cocktail. I received some new XL iced tea bags from Le Palais des Thés that I waned to put to good use. They are perfect for hot weather because no boiling water is require, just steep for 30 minutes and your done. Of course we need some spirits, I opted for Bolla Pinot Grigio and a little rum. Fresh peaches, mango, and strawberries give this drink a light fresh taste that will quench your thirst on the hottest of days.

Summer Tea and Wine Punch

  • 2 cups Thé des Alizés ice tea or any peach ice tea
  • 2 cups Pinot Grigio
  • ¼ cup white rum
  • 1 mango diced
  • 2 peaches diced
  • 1 cup diced strawberries
  • 1 lime
  • 4 tbs agave

Brew peach ice tea according to package instructions. Place diced fruit in the blender along with juice from half of the lime. Reserve some of the diced fruit for garnish and slice the remaining half of lime for garnish as well. Blend fruit until liquefied. Strain fruit puree and add to ice tea. Add wine, rum, and agave. If necessary add more agave until desired sweetness is achieved. Add diced fruit and chill for a few hours. Overnight is even better.  To serve, fill glass with ice and top with sparkling water if desired.
