These onion rings are perfectly crispy and the homemade ranch dip is just perfect. The batter also has the addition of vodka. Beer Battered Onion Rings with Roasted Garlic Ranch
Ranch Dip
- 1 head roasted garlic
- ½ tsp salt
- ¼ cup sour cream
- ½ cup mayo
- ¼ cup buttermilk
- 2 tbs finely chopped fresh parsley
- 1 tbs finely chopped fresh dill
- 1 tbs finely chopped fresh chives
- ½ tsp white vinegar
- ½ tsp Worcestershire
- ½ tsp hot sauce
Add roasted garlic to bowl and add salt. Use a spoon and mash into a paste. Add mayo and sour cream and whisk to combine. Add buttermilk. If you want the consistency to be a little thinner, add more buttermilk. Add remaining ingredients. Chill dip for at least 30 minutes.
Onion Rings
- 1 large sweet onion cut into rings
- All purpose flour
- 1 cup cake flour
- ¼ tsp baking powder
- ½ tsp salt
- 1 tsp smoked paprika
- ½ tsp cayenne
- ½ cup beer
- 2 tbs vodka
- oil for frying
Cut onion in rings and dust with all purpose flour so that the batter will stick. To make batter combine cake flour, baking powder, salt, paprika, and cayenne. Slowly whisk in beer. If batter is still on the thick side, add a little more beer. Add vodka
Heat oil in a pan or deep fryer to about 350º. Dredge flour coated onions rings in batter letting excess drip off. Carefully place rings in hot oil and fry approximately 1-2 minutes per side. Drain on paper towel and sprinkle with salt. Serve with roasted garlic ranch dip and dig in!
