I wanted to share the recipe for the waffles I made for my birthday brunch. As I said before, I didn’t make the chicken to go with these mini bites, but if you have the time, try my recipe for buttermilk brined fried chicken just cut the chicken in smaller pieces. These waffles are great on there own with a little fruit compote or served with fried chicken and a little maple syrup on the side. Also try them with this mixed berry filling and berry syrup.
For these mini bites, I served the syrup in small pipettes on the side, which I totally forgot to take a photo of. I just hate soggy waffles and I wanted my guests to be able to control the amount of syrup. I made these waffles in a metal waffles iron and in a non stick. The metal yields a crisper exterior and a nice fluffily interior, but the non stick is way easier to use in my opinion. I rarely use the metal waffle iron so I definitely need a little more practice with it! Either way, the waffles are great so give them a try!
Buttermilk Cornmeal Waffles
- 1 cup flour
- 1 cup cornmeal
- 1/4 cup brown sugar
- 2 tablespoons white sugar
- 1/4 teaspoons salt
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 3 eggs
- 2 cups buttermilk
- 3 tablespoons vegetable or canola oil
- 3 tablespoons unsalted butter melted
- 1 teaspoon vanilla bean paste or extract
- 1 tablespoon bourbon (optional)
Sift dry ingredients into a large bowl. Whisk together wet ingredients in a separate bowl. Add wet ingredients to dry and whisk to combine. Cook waffles according to your specific waffle makers instructions.
If making for a party, cut waffles in bite size pieces and top with a small chicken nugget. For an entree, serve waffle with whole pieces of chicken or wings.
