Every year for my birthday I have the same dilemma. What to do?! The older I get the less I feel like partying and the more I want to relax and do something low key. I was undecided for a while as to what I wanted to do, but because I planned to celebrate on a Sunday, I figured brunch would be perfect. While I do enjoy cooking, I didn’t want to spend all day in the kitchen so I did take a few short cuts with my menu. To save on time, I purchased the chicken for my chicken and waffles and also full size crab cakes which I made into minis. I had so many things I wanted to make, it was so hard to narrow them down. Besides the items pictured, I also made a caramelized onion and spinach quiche and fresh fruit skewers.
I know it’s no where near Mardi Gras, but my mom wanted to have a Mardi Gras themed party for her retirement/birthday party. We had so much fun at Mardi Gras we just wanted to give our friends and family a little taste of New Orleans. I was running around like crazy during the party that I didn’t have a chance to take a lot of pics of the food (the best part I know) but I hope you still enjoy!
I wanted to share some photos from a recent trip to Jamaica. I have to say I absolutely loved Jamaica! We stayed in Montego Bay, but we had a chance to visit Ocho Rios and Negril with a driver. If you check out my YouTube channel you can find a video and more information about our driver Solomon. We stayed directly across the street from Doctor’s Cave beach. The beach does charge an entrance fee, but our hotel provided free daily passes. The beach is small, but extremely peaceful and the water is beautiful. You can seriously just lay out for hours! A beach bar is close by and the servers come around to you on the beach so you don’t even have to move until your ready lol.
When I was in New Orleans I had a coconut bread pudding at Deanie’s and also a creole bread pudding at Commander’s Palace with whiskey sauce. I wanted to make my own version and combine the two. I’ve made bread pudding in the past and I have to admit, the results were not that great at times. I find it hard to make sure the bread pudding stays moist after baking. I had my fingers crossed the entire time it was in the oven! I was really happy with the results and hope you guys give it try especially if you love bread pudding.
