Chicken and Bacon Waffle Sandwiches

This picture picture definitely does not due this sandwich justice. This idea was suggested by one of my friends and my mom. I didn’t want to do just  a plain waffle with a pice of chicken on top. So, I added a little bacon to the waffle batter and topped with a spicy and sweet slaw with maple and jalapeno. This recipe, takes two days so prepare in advance. Both the chicken and the waffles have to rest over night. It is well worth the wait! Serve with maple syrup on the side for a little extra sweetness.

Chipotle Shrimp Burgers

I can not resist a nice big juicy grilled burger. However, there are some people that can. If you are one of those people, this recipe if for you.  I’m just kidding! while I do love my regular burgers, this is a nice alternative. It has a little heat from the chipotle, coolness from the slaw, and a little sweet from the grilled pineapple salsa.

The Best Burger Ever!

Okay, maybe it’s not the BEST burger in the whole world, but it’s pretty close and of course it has bacon jam on it! I used a little spice rub on the burgers like the one I used for the pulled pork. I grilled the burgers and topped them with gruyère, cheddar, grilled onions, grilled jalapenos, shredded lettuce, and bacon jam. Yummy!

Grilled Cheese with Bacon Jam

The first thing I made with the bacon jam was a grilled cheese sandwich. I added a layer of gruyere, bacon jam, and then a layer of cheddar. Delicious! Stay tuned for more bacon jam madness!

BBQ Pulled Pork

I love BBQ, but here in Philly it’s still a little too cold to pull out the grill. I wanted something with big BBQ flavor so I decided to make some pulled pork in the slow cooker. Slow cooker meals are so easy to put together and they always turn out with big flavor and lots of left overs!
