Baked Gnocchi with Smoked Blue Cheese Sauce

After having gnocchi with gorgonzola sauce in Florence, I knew I wanted to re create it at some point. This gnocchi is baked in a creamy blue cheese sauce that is the perfect comfort food. I used a smoked blue cheese, but you can use any type of blue cheese you like. Making the gnocchi takes a little extra time, but store bought gnocchi can definitely be substituted. This dish is great for the upcoming chilly nights as a main dish but would also be  a great side for steak or chicken.

Grilled Meyer Lemon Chicken

Now that the heat wave is over here on the East Coast, it’s possible to go out and grill again. If you are unable to find Meyer lemons, you can substitute with regular lemons. If you are using regular lemons, add an extra tablespoon of honey. I served this chicken kabob style with a quick grilled flat bread that I made using some left over pizza dough. Just lightly brush the dough with olive oil and grill for just a few minutes on each side.

Short Rib Chili

Who doesn’t like a bowl of warm chili on a cold winter night? This chili has the perfect amount of heat and a little smokiness form chipotle. This chili is great on it’s own but you can also us the leftovers for tacos, pasta, and sandwiches. I hope you give it a try!

Carnitas Soft Tacos

Of course I had to show you what I did with my left over pulled pork and strawberry mango BBQ sauce! I mixed a little BBQ sauce with the pork while it was re heating. I topped my flour tortilla with the pork, a little more BBQ sauce, fresh salsa, sour cream, cotija cheese, Habanero hot sauce, and a squeeze of lime. Delish!

My Last Food Splurge

I have been on a food binge since the holiday started, so for New Years I decided to have one last food splurge. One of my favorite restaurants is Bobby Flay Steak in the Borgata and I really love the Philadelphia Style Strip Steak. Which is served with a provolone cheese sauce and caramelized onions. I couldn’t think of a better way to blow calories than on a nice thick steak covered in creamy cheese sauce. Yummy!
