Roasted shrimp rolls with Wine Pairing

In the words of Lil’Kim “I been gone for a minute, now I’m back at the jump off”. It’s been such a long time, but I’ve returned with more recipes and wine pairings. First up are these roasted shrimp rolls with fennel. Paired with vinho verde, this is truly a perfect summer combo.

Wine Pairing

Wine: Sol Real Vinho Verde White 2019

region: Vinho Verde Portugal

Grape: 35% Loureiro 35% Arinto 30% Trajadura

Vinho Verde is fresh, light, crisp, with a hint of fizz making it the perfect candidate for summer sipping. Notes of apple, citrus, with a light herbal note works well to bring out the fennel making this wine a great companion for the shrimp rolls.


Roasted Shrimp Rolls with fennel

  • 1 lb shelled and deveined shrimp
  • 1/4 cup mayo
  • zest from half a lemon
  • 1 tbs lemon juice
  • 1/4 cup shaved/sliced fennel
  • 1 tbs fennel fronds 

Preheat oven to 400 degrees. coat shrimp with a little olive oil and season with salt and pepper. Roast for 6-8. Let cool and roughly chop.

Place shrimp in a bowl and add remaining ingredients. Season with salt and pepper to taste. Chill in fridge until ready to assemble. 

Serve on butter toasted split top buns. Top with additional fennel fronds. Pictured with home made chips seasoned with old bay.
